How does trample work when 10 10 double strike hydra is blocked by a pro green creature that is a 2 1

Trample deals enough damage to normally kill a creature before moving onto the player, regardless of whether or not the creature dies. This means that the hydra will deal 18 damage to the defending player, even though the creature takes none.

702.17b The controller of an attacking creature with trample first assigns damage to the creature(s) blocking it. Once all those blocking creatures are assigned lethal damage, any remaining damage is assigned as its controller chooses among those blocking creatures and the player or planeswalker the creature is attacking. When checking for assigned lethal damage, take into account damage already marked on the creature and damage from other creatures that's being assigned during the same combat damage step, but not any abilities or effects that might change the amount of damage that's actually dealt. The attacking creature's controller need not assign lethal damage to all those blocking creatures but in that case can't assign any damage to the player or planeswalker it's attacking.

Lethal damage is always 1 for a 2/1.

Note: If the hydra is not green (like {rock hydra}) it will deal 19 damage instead since it will kill the creature with its first strike damage.

What if the interceptor is indestructible? Would it just stop trample because no amount of damage is enough to kill it?

No: trample defines lethal damage as the creature's toughness, regardless of whether or not it will actually kill it.

Wouldnt it deal 19 because in the normal damage step the creature would already be considered to have taken lethal damage, thus letting 10 through?

If you look at the bottom of my original post, I said that that is correct if the hydra is not green. I assumed the hydra is green since there are only 3 or 4 nongreen ones in magic and otherwise mentioning that the 2/1 has pro green would be pointless.
