Okay so what if Olivia turns a token into a vampire. If I populate it (after already pinged) is the copy of the token a vampire also?

Populate creates a copy, and copies emulate all aspects of a card, including creature types. So yes! The populated token would be a vampire if the token being copied has previously been pinged by Olivia.
