If i have all my creatures protection from black can i still use  {Viscera Seer} to sac them and if they have pro black will  {Mutilate} kill them?

Yes to both. Protection gives, well, protection, from the following:

Damage
Enchanting
Blocking
Targeting

A good way to remember it is DEBT. None of these situations do any of those, so protection will not keep them safe.
