If I play launch the fleet and target {Akroan Hoplite}, can I target the soldier he creates with the same launch the fleet.

Also, if I use two {launch the fleets} in the same turn targeting everything, will the attack triggers trigger twice?

so i think you mean {akroan crusader}. when you cast {launch the fleet}, you must announce all targets. so you target the crusader, and whatever else, then heroic goes on the stack. so even though heroic resolves before the spell, it wont resolve early enough for the token to be targetted.
and two {launch the fleets} that have resolved will both trigger and have an effect. they are not redundent.

Yeah it was Akroan crusader. The Hoplite is pretty good too though
