Athreos

If I have {desecration demon} out. And opponent has {athreos, god of passage} out. When they sac to the demon. Does that count as dying, or since it's sacrificing it dosent work with athreos?

It would count, "dies" just means moved from the battlefield to the graveyard.  Sacrificing is how it "dies".
