If I have a {perplexing chimera} and I enchant it with {Soul Ransom} will it still leave my control if I choose to use it's triggered ability on one of my opponents spells later?

Each "gain control of" effect will override the previous one, so {perplexing chimera} will still leave your control if you use its ability, regardless of whether or not it has a {mind control} effect on it.

You can use something like {homeward path} to get the chimera back after you have used its ability, however.

The answer is no and the reason is the time stamp on your soul ransom.  I don't have the relevant rule or time to get it atm, but soul ransom (and any other "you control enchanted creature spell) will only gain control of the creature when it hits the battlefield.  Hopefully a judge can come by and confirm this later with an actual ruling but the answer is no, you cannot infinatly trade spell and creature and then get it back.
