Sun Titan and ordeals

If I used a {phalanx leader} to sac lets say an {ordeal of Heliod} and later had a {sun Titan} and my phalanx leader attack to return it to my hand could I place the ordeal on phalanx leader before his attack hits making me sac it again?

No. Sun Titan puts the permanent onto the battlefield as a trigger when he attacks. The ordeal triggers when you attack with the creature it enchants. The creature is already attacking, so it won't cause the ordeal sac trigger.

I feel like if it's the act of attacking with the sun Titan that triggers the return of the ordeal... The ordeal would have missed its window to trigger off of the phalanx leaders attack, as all attacks are technically declared simultaneously.

I am curious though if the ordeals need the attack to trigger the sacrifice or whether they can be sacrificed at any other time if the creature has 3+ counters for any other reason.

You sacrifice it as a result of the attack. However. If another card causes you to sacrifice it. You still activate the ordeals effect of having sacrificed it.
