Yes they can since {knowledge pool} only triggers when something is cast from hand.

Although you stick a {curse of exhaustion} on them and you laugh

But read it, it says "whenever a player casts a spell from his or her hand, that player exiles it. If the player does he or she may cast another nonland permanent exiled with Knowledge Pool without paying that cards mana cost"

So once all of my nonland cards exiled are gone. Can I even cast any other cards from my hand?

The exiled cards go under Knowledge pool. So you cast something, then get something else. The pool won't run out except for maybe the first person to cast a spell.
