Say I attack and have enough mana mana to flash in  {Silverblade Paladin} with  {Alchemist's Refuge} after blockers are declared and pair it to my attacking creature. Would my creature get double strike at that point?

Yes. Flash is instand speed.

Even after blockers are declared?

If so, this is different from flying, I was told by my local judge that if I were to give my attacking creature flying, after the declared blockers step, then it still would deal no damage.

That's because once a creature has been "blocked" it's blocked. Period. Flying wont help because its already blocked. Doublestrike applies to combat damage, not the ability to be a legal blocker.

No worries. I'm still learning stuff and I've been playing a long time now.
