Wild Defiance

I use  {Traitorous Instinct} on my opponents 2/2 monster while he has  {Wild Defiance} on his field, my question is will the monster I'm trying to take controll of be at 7/5 until end of turn ? Cause the guy that I'm playing says no because he thinks my card activates first.

Yes it will become a 7/5 until end of turn. It's because of how the stack works. (Check out the pancake analogy in the sticky thread at the top of this section)

Step 1. You play {Traitorous Instinct} targeting his creature.
The {Wild Defiance} sees the targeting of the creature by the sorcery and places its trigger on the top of the stack.
When it resolves it pumps the creature +3/+3.

Now {Traitorous Instinct} resolves pinching their creature and gives it +2/+0.

The creature is now 2/2 + (+3/+3) + (+2/+0) = 7/5
