Multiple planeswalkers

In my opinion, no more than two of the same planeswalker in a deck. If you want a third a planeswalker, I would suggest having a completely different one. That way, you can have two out there at the same time.

What about expendable ones? When I ran sorin I did his -2 every time. Liliana is often just this:

Target player sacrifices a creature. The next time a single source would deal damage to you, prevent it.

I don't really see the reason to deliberately limit yourself to 2. If your deck is running a PW, usually he/she is doing nasty things

{Venser, the Sojourner} + {Stonehorn Dignitary}

{Jace, Memory Adept} and any mill deck (still wouldn't run 4 of him, no matter what)

{Liliana of the Veil}... Well, can discard any extras in your hand with her +1 ;)

That was just my opinion. It's how I play. Different strokes for different folks.

I find that most opponents focus on the planeswalker immediately, and since you could chump or kill a lone attacker, they often send everything at the PW that they can.

So your PW is dead, who cares? They wasted an attack phase or burn to kill it instead of targeting you or your creatures. When you add the reasonable mana cost, the fact that you only used 1 card, and whatever nasty ability they did...

Cheap PW's with a decent ability can definitely be worth it. I wouldn't hesitate to put in 4 if your mana curve can accomodate it.

Only problem I have with that is you can get the PW and they die in a turn, or you could have put something else in that would be a game winner.  Just a what if though.  What you described is usually what PWs are when I play with people around here.
