If I thought of it another way, Can we look at it like how we treat legends in THG? Does the rules say anything about legends in THG? I tried looking for it but to no avail.

Since it did not say it need to be cast on second main phase, and that it says "additional combat phase" I do think that player still gets two combat phases.

Just that yes, the untapping will not trigger since no creatures have attacked.

You can't, since you must target a creature with a +1/+1 counter. If hoplite does not have a counter on him, then you cannot target him.

Anything that is "cast" from the hand or as a copy is a spell, and is still a spell until it gets resolved.

Permanents are not spells.

 {Rest in Peace} has a replacement effect which would exile cards instead of cards going into graveyard.

"Dies" means this creature is put into a graveyard from the battlefield. So with RIP around, "die-ing" triggers won't happen.

It would resolve, but you cannot stop the trigger from happening once it has been declared an attacker.
