What happens when you have two {rhox faithmender}s on the battlefield under your control? Do their effects stack?

For the purpose of doubling life gain, yes. Each is a seperate trigger on the stack. Thus 5 life gain would become 20 (5x2x2).

You are correct, it's in the card rulings to confirm. You may resolve/gavel ;)
