As long as it doesn't have summoning sickness, I don't see why not.

True. If it doesn't have summoning sickness you can use its ability as a mana source anytime.
Technically not while they have priority. But they will have to send priority your way to give you a chance to use fast effects pretty much any time they do anything (after their own priority is done).
Player2 does something. Player2 has priority to use fast effects. Passes priority to player1 to use fast effects. If no, continue player2's turn. If yes, player1 does their fast effects and passes priority back to player2 for fast effect responses. Repeat process until no more effects, stack is empty, and return to active player's turn.
A mana dork is an activated ability after all. Land tapping is a different story I believe.

This. The only times you can use mana abilities (land or mana dorks) is when you have priority, during the casting of a spell/activating an ability, or if you are required to pay a cost during the resolution of a spell or ability ({Norn's Annex} for {Vigil for the Lost} for example). You can't just tap all wily-nily.
I think the question is more about interrupting a creature tapping for mana. You can't "Armageddon" at instant speed to prevent someone from tapping their land and getting the mana. And you can't bolt a llanowar elf to prevent someone from getting the green mana from it.
I've had a Gideon out before and used his +2 ability. My opponent would tap his dorks for mana but not use it...legit?

Here's the situation. My opponent attacked its now my turn to cast instants, like bolt or destroy target creature. I don't have enough mana so I turn to use my mana Myrs. Is this legal or not?
