Can I attach two Swords of Feast and Famine to one creature? And would my opponent have to discard two cards?

You bet!  You can put any number of swords on a creature and each of them will trigger if it hits a player.

So if I had an equipment like {Trepanation Blade} on a creature with double strike, would its ability trigger twice?

no the creature only attacks once
