Active player taps two manna and birthing pod then sacrifices a creature. Can non active player use peel from reality return sacrificial lamb to active players hand and stop the effect of birthing pod? And if so can active player choose a different creature to sacrifice?

The active player sacrifices the creature as part of the cast. This happens before the ability is put on the stack and so no one can respond to the sacrifice.

Could the inactive player have returned the creature during the active players upkeep? If so could the active player respond by using birthing pod? Oh and thanks for your help here.

Sure. Non-active player can do it whenever they get priority. Priority has to get passed around before the end of any step or phase.
Oh just reread birthing pod and it has to happen when you can cast a sorcery so it couldn't respond to the peel from reality?
