Anyone that lets you get to Tammy ulti with {Omniscience} on the board doesn't deserve to cast any more spells. 😜

Just use {Rewind} and you don't even need Omni.

Aw hell, if you've got THAT much mana to burn, play {Time Stop} on their upkeep.

And then don't play anything to win, just force them to sit and watch you cast {Elixir of Immortality} over and over.
