I didn't know if the soldiers it spawns would count it as attacking alone or not

No. First you declare your attacker(s). Then all triggers would get put on the stack in order. By the time the new tokens are made, the exalted triggers have been put on the stack. 

Exalted creatures have to be on the BF at the time the creature is declared, any creatures added after won't contribute.

Well since you can choose which order the triggered abilities stack, my question is can you swing with hero, trigger the exalted, then the tokens. From that point can you trigger exalted again? Or is it too late since the first trigger of exalted checked for all exalted cards on your side?

hero of bladehold is declared as a solitary attacker once. exalted triggers only on this declaration. new instances of exalted will not be counted even by spontaneous exalted tokens.

That makes sense, since exalted was already checked for so to speak. And yea even if it did trigger again, it wouldnt matter since 3 creatures are now attacking

She wins games, and with {sublime archangel} she can make any creature do the same! Two 1/1 exalted creatures for every attack!! Even if she dies one of your tokens can swing next turn for a whole lot
