So if I sac {Flayer of the Hatebound} with {birthing pod} and bring out {Gisela, Blade of Goldnight} do I do 10 damage or 5? And how do the things go on the stack?
Pod puts the creature out first then undying triggers
You sacrifice the creature and put pods ability on the stack then undying goes on the stack resolves first then you bring out the angel so only 5

Nope you're activating pods ability first so it goes on the stack first which results in a creature dying then the death triggers would go on the stack on top of pod. All death triggers will resolve before you get to search for a creature
Youre paying an abilities cost once it's paid it's put on the stack. The creature died as a result but the ability is already on the stack.

Uhhh but then wouldn't the pods ability resolve before undying is put on the stack since its cost has been paid?
Death causes undying to trigger it would immediately be put on the stack before pod could resolve

Any ability resolves all
At once there is no second part to pod. You put the ability on stack at the same time the ability goes on the stack a
Creature dies causing the undying trigger to subsequently be put on the stack.

If you like using Flayer, use Phyrexian metamorph to copy flayer and do 10 damage when one of them dies. Both die and that's game
