Pretend i have {deadeye navigator}, {restoration angel} plus two other creatures on the field. When my opponent attacks me and after I declare blockers with all my creatures, could I bounce {restoration angel} using {deadeye navigator} three times to bounce my other creatures so damage is not dealt during the damage step? or could I only activate the bounce effect once before the damage step starts. Hopefully my wall of text made sense.

Assuming your Angel was paired with you navigator in the first place, yes you can do this. You can do it all during the Declare Blockers step after you've blocked. It won't help vs trample though.
So then none of his creatures would die and he would take damage except trample?

The only damage I would take is the trample damage. No other damage would get through since I blocked then blinked my stuff
