Can I steal my opponents Karn then use it's bomb? Do the exiled cards come into play under my control?
If you manage to steal karn, then he does not lose his counters because he doesn't change zones, only sides of the battlefield. If he has enough counters, you can ultimate right away. You will get all the exiled cards because it says: put all exiled cards under your control"
"your" refers to whoever activated the ability. If it said "karn's owner", then the other guy would get them.

No, but saving a zealot until your opponent pluses a pe enough to use its ultimate and then boming them with it the next turn is fantastic.
