Once a plainswalker resolves.

Do I have time to instant speed kill one before they can put an ability on the stack?

No.

Planeswalker on stack.

Everyone passes so it resolves.

Player whose turn it is gets priority, as it's their turn and there's an empty stack.

Activates ability.

Too late to stop.

However, you could do this convoluted trick: in response to activation of planeswalker ability:
1) Use  {Liquimetal Coating} targeting the walker.
2) resolve Liquimetal coating ability. Walker is now an artifact walker. Walker ability is still on stack.
3) activate ability of  {Ouphe Vandals}, sacrificing Vandals and targeting the artifact walker ability. If no further responses, resolve Vandals.
4) Artifact Walker ability is countered and artifact walker is destroyed.

Sounds fun!!!

Wait but I thought pw abilities activated at sorcery speed? So couldn't you respond to an ability activation by dropping a kill spell?

Opponent with Walker still holds priority

It is important to note that this is only the case if the active player doesn't take any other actions between dropping the planeswalker and activating one of its abilities. Once priority is passed the walker is fair game, and if it dies before the stack is empty again then their abilities will not get to be activated.
