{Kalitas, traitor of ghet} if my opponent controls Kalitas and try's to sac a zombie to get counters, can I respond and kill the zombie before he gets the counters. I think not, but just wondering.

True. Anything before the colon of an activated ability is a cost. Just like you can't waste a fetch in response to fetching, you can't kill the zombie to counter Kalitas' ability.
Now can you kill Kalitas with {grasp of darkness} in response of them sacking zombie?
