If Breaker of armies is destroyed because of blocking creatures what happens to remainder of creatures who are suppose to block Breaker of Armies? Can they be assigned to block another creature attacking since the effect is over? Or are they done because the block was declared?
Once blockers are declared that's all they can do. You can't switch blockers if some kind of fast effect happens.
Besides what Rass said, combat damage is done all at once. Combat is broken down in a number of steps.
1) Attackers are declared
2) Blockers are declared
3) Damage is distributed
4) End of combat
Between each step, you have the ability to use instants or abilities. If you'd want to able to free up blockers to block other creatures then {breaker of armies} however, you'd have to play an effect before blockers are declared.
You could outright destroy it with {murderous cut}, or give it some kind of evasion, flying for example (that way less of your creatures can block it).
