Just double checking
If I have {Grislebrand} out and a {Vedalken Orrery}
I have to pay the life to activate the griz ability, but at no point can I flash out an {Platinum Emperion} to "prevent" the life change due to it being a payment, right?
because either the PE hits the field and I try to pay the life and cant (PE says no) or I pay and then flash PE in but life is lost as payment not because of ability (draw 7) on stack...
do I have this right?

You pay before the ability even hits the stack.
So you can't respond to it, only thing I can think of is {children of Korlis}.

That is a lot better. You can draw your deck just as long as you have 8+ life. (And your deck has a multitude of 7 cards left)
