If I have a pro red and my opponent has a pro red (both are red creatures) can he block my pro red with his?
No.

Protection from a color means the permanent cannot be damaged, enchanted, blocked or targeted by anything with that color. The fact that the other creature also has protection does not change anything.
So your pro red cannot be blocked by a red creature.

Mine was short and sweet, at least. :P
I run {Earnest Fellowship} in a 5 color deck. Would {Sabertooth Nishoba} have pro blue/red/green/white?

With that being confirmed, the only thing my opponent can block with is a mono black or artifact creature, correct?

Don't forget colorless creature that aren't artifacts. Morphs and the like can block you all day until you get protection from creatures.

I need {Progenitus}. ;-;
+1 for bringing this to my attention.
I have a deck built around him, tokens, and {Polymorph}. Face it, you can't pay it's mana cost.
EDH says hello.
