{Mycosynth Lattice} + {Dream Coat}. Once I enchant a creature and use the ability on the coat, can I force a creature to gain a color or does it stay colorless due to the lattice?

Since there are two effects attempting to modify the same thing, you use time stamps: most recent effect takes precedence. If you activate your coat, it'll keep whatever color you choose.

The Lattice is on my side and I'm going against a mono blue. My opponent tries to throw out {High Tide}, will he be able to tap for 2 colorless, orrr...?

Lattice says you can use mana as though it was any color. The actual color of the mana doesn't change. So he'll tap an island for {U}{U}, which then can be used to cast any 2 CMC spell, regardless of colors ({Disenchant} or {terror} can both be cast with this mana for example)
