Can I equip {Runechanters Pike} to a creature with shroud?

No. Shroud means can't be the target of spells or abilities. Even yours

The ability here being Equip.

Yep, equipping basically means: Attach this equipment to target creature you control. So it cannot target creatures with shroud.

That being said however, there are ways to attach equipment without targeting, such as the activated ability of {Stonehewer Giant}.
