Title: Convoke concern

Can You tap a creature in response to them wanting to convoke it for a spell? This came up at FNM last night with my friend when he wanted to use {Thassa's Ire} in response to their convoke {stoke the flames}

No.  A spell isn't fully cast until the costs are paid.  Before your opponent has a chance to respond to your Stoke, you announce it, move it to the stack, choose targets and pay costs, which in this case involves tapping creatures.  At no point during that time would the opponent have priority to potentially tap your creatures.
