im building a deck with  {Jeleva, Nephalia's Scourge} as the commander how does the attack ability work? for example can i play more then 1 each time she attacks or just 1 each time

'You may cast an instant or sorcery...'

That means zero or one.

Side question, does the game just allow a sorcery to be cast as if it had flash with her ability? Or does it just happen. Silly question I guess.

Her ability overrides the usual restriction of casting sorcery spells during a main phase and with an empty stack. Because her ability states that an instant or sorcery may be cast when she attacks means if it is during the declare attackers step, and if she is declared as an attacker, then an instant or sorcery that was exiled may be cast then and there.

It would be different if the wording on the card said 'until end of turn, you may cast an instant or sorcery etc .....' , for example {snapcaster Mage}. In that case, sorcery spells would have to follow the usual rules of casting sorceries.
