I don't think it will work, but figured it was worth asking.
If I have a {windswept Heath} and {mistveil plains} on the battlefield, both untapped (as well as 2 white creatures to allow the ability of the plains). I choose to sac and fetch a regular forest. Is there any chance between the Heath hitting the graveyard and shuffling in which I can activate the mistveil plains to tuck the Heath on the bottom to be shuffled in from it's own ability?

nope. players will not get priority while spells or abilities are mid-resolving. you will have to wait for the fetch ability to fully resolve before you can take any actions (other than floating mana}.

Since you sacrifice the Heath as part of the cost to its ability, you can respond to the ability by tucking with Mistveil Plains. It works like you want it to (Just remember that you can use the land you fetch to pay for it and still have it shuffled in)
The reason I don't think you can though is because there is no break in the ability on {windswept Heath}. It's just 1 long ability. I would think that maybe you could if it read:
"
{T}, pay 1 life, sacrifice ~~~~: search...onto the battlefield
Shuffle your library.
"

sorry remillo is right i blew up the thread and was wrong. sorry everyone. misread the question. so you pay the life sac the fetch, and the search trigger goes on the stack. in response, you can activate {mistveil plains} and put the fetch back in the library.
So before the search trigger goes on the stack I have to use the plains ability?
no. you activate fetch ability. that trigger goes on the stack. before you pass priority you respond to that trigger by activating {mistveil plains}. by that point the fetch land is in your yard so it can be returned.
