Does {wall of roots}'s (-0/-1) disappear when you put a (+1/+1) on it?
Nope. Only +1/+1 counters and -1/-1 counters cancel each other out.

Nope. They effectively cancel each other, but the counters still remain. There's a reason we've been on +1/+1 and -1/-1 for a long time. It's just easier to keep track of.
If I have 10 (+1+1) counters on {wall of roots}, can I use his ability 15 times before he dies?

Yes, only once per turn, though.
As long as it doesn't hit 0 toughness, yeah.
