Title: Ensoul artifact and fated infatuation

If I enchant an artifact with ensoul artifact and it becomes that wonderful 5/5 could I copy it with something such at fated infatuation and get a permanent copy that would stay a 5/5 even without the enchantment?

Yes. It'd be a 5/5 indestructible artifact creature token.

Incorrect. When you copy a permanent, you don't copy any enchantments, spells or counters attached to the permanent. In the case of an artifact you've enchanted into a creature, you will get a token copy of the unenchanted artifact. The enchantment in this case merely acts to make it a legal target.
