I have {Assemble the Legion} with 4 counters on the board and played {Cathars' Crusade} last turn. Just to keep it easy no other creatures in play. On my upkeep do all 5 tokens get 5 +1/+1 counters?

Yes. They "see" each other entering the battlefield.
