Let's say my opponent casts {dismiss into dream}. If I play a spell to boost/protect/enchant my own creature, does it die because of the dismiss?

Assuming the spell says "target" on it, and most that do what you're describing do say that, then yes you'd have to sacrifice it.

The card says "each creature your opponent controls." So no.

wait. your opponent cast {dismiss into dream} it resolves. if you target you own creature it will trigger {dismiss into dream} and youll be forced to sacrifice it.
