Now when it says "if unused mana would empty from you mana pool, that mana becomes colourless instead" does that mean that the unused mana stay in you mana pool untill it's emptied

Unused mana turns colorless and stays in your mana pool until you spend it or Kruphix leaves the battlefield.

Unused mana will remain in your mana pool until the end of phase when Kruphix leaves play.

Why have that when mana burn was removed in 10th Edition?

But if it empties at the end of each phase, why tap it to begin with?

The point is that it will no longer empty for you. It just pools a bunch of colorless mana.

I wasn't playing magic back then so correct me if I'm wrong, but I was under the impression that mana burn was only for coloured mana?

Mana burn was for when you tapped mana and didn't use it all in that phase it did 1 damage to you for each unused mana.

Mana burn is an obsolete game concept in which a player would experience loss of life points for having excess mana in his or her mana pool when a phase ends. For instance, if a player tapped a Swamp to cast Dark Ritual, which would give that player bbb in his or her mana pool, then cast Erg Raiders (which costs 1b), and then let the phase end in which Erg Raiders was cast but did not spend the remaining , that player would lose 1 life from mana burn.
The rules update to Magic 2010 has removed this part from the game. [1] Players do not suffer loss of life for unused mana anymore.

THIS RULES TEXT IS OBSOLETE From the Comprehensive Rules:
300. General
300.3. When a phase ends (but not a step), any unused mana left in a player's mana pool is lost. That player loses 1 life for each one mana lost this way. This is called mana burn. Mana burn is loss of life, not damage, so it can't be prevented or altered by effects that affect damage. This game action doesn't use the stack. (See rule 406, "Mana Abilities.")

I guess it would be bad with Kruphix, cause mana isn't "lost"..  But if Kruphix was removed.. You'd take a nasty burn with all that left over mana.
