Thoughts
I personally would cut must cutter and the lion for dissolve as a 3 and courser as a 4. Cut an elspeth for another jace at least so you have more chances of card advantage since you only have 2 sphinx.
In side board I would cut the 4 {gainsay}. I would do 2 negate and 1 dispel or 2 dispel. Helps more in the any scenario that runs heavy non creature. Makes it less dependent on blue. If this is just a meta call then keep it but I don't see a use for 4 gainsay
Well I reason I have Mistcutter and fleecemane is to have an advantage against control, get early damge and be able to have a chance first match. Then maybe have 1 of my fleecemane monstorous for a creature always on the board. Control has been my worst matchups

Control is very broad. Which matchup of control are you having trouble with? Your advantage is multiple planeswalkers able to protect one another, advent, and ramp with the caryatids. So in theory going turn one scry, turn 2 caryatid, turn 3 is jace or kiora getting you card advantage or ramping you to turn 4 elspeth. Bant walkers is an amazing deck that can deal with a lot. Another thing to consider as well since you are a control list as well is putting in 2-3 more lands to help make sure you don't miss land drops. They are kinda important
Usually anything blue control. Always goes to draw. But with this, the side helps win
If it's just any control deck you have problems with maybe it's more on the line of seeing which route you need to take in those matchups to pull out the win instead of timing out. Proxy up some deck lists of the control decks and play against yourself and learn the options. That might help more than off setting the main board to lean more toward one matchup. I did this with GR Monsters and BW midrange. Helped me see the plays and why they would play a card when they do.

I know what I need for answers. But when put something in, something else needs to be out. And my main is set up for all decks. But no matter what against like esper and such, it always ends up drawing, just hard to figure out
I just wonder if game 1 goes nowhere if I should just give them the game and go to sideboard? So I don't time out. When it goes to side I have the advantage... Opionions would be appreciated.
I think mutavaults is what I am missing to push through the last bit of damage. Cause they are usually down to atleast 8 life by the time verdict comes out

Drop kiora to 2x maybe
Add plasm capture x1 (maybe 2) (T4/5 into aetherling with spare land)
Add syncopate x3
Add render silent/dissolve possibly.
I just feel you need more counters, you have a lot of creatures and some seem redundant
Maybe drop divination since you have sphinx and jace. Jace may get a 2nd copy.
I just know playing vs control that jace is great draw for them and an extra item on the board for me to remove
Also don't forget deicide and banishing light for SB
