My opponent attack with a {Batterskull} and I block with my {Spellskite}, then during the combat phase, I swapped my spellskite using {Goblin Welder} for an artifact in my graveyard.
Is the batterskull blocked and it deals no damage?
Yes. Once a creature is blocked it stays blocked even if the blocking creature disappears.
For example, there is the card {Curtain of Light}. It makes a creature blocked without dealing damage. Let me find rulings too.
Here.
509.1h (http://imtgapp.com/forum/index.php?action=imtg;area=rule;number=509.1h): An attacking creature with one or more creatures declared as blockers for it becomes a blocked creature; one with no creatures declared as blockers for it becomes an unblocked creature. This remains unchanged until the creature is removed from combat, an effect says that it becomes blocked or unblocked, or the combat phase ends, whichever comes first. A creature remains blocked even if all the creatures blocking it are removed from combat.
Yes. You can think on it like its bening blocked by a 0/0 creature. Another fun fact is if that creature has trample and the blocker assigned to it is removed trample still deals full damage to you as if it wasn't blocked
This is becuase with trample you have to assign lethal damage to a creature (enough to kill it) before you can move the rest to the defending player. If the blocker is removed, it's like it's blocked by a 0/0, so 0 damage can be assigned towards the blocker (enough to "kill it") and the rest goes to the player.
Another fun fact - when a creature has both trample and deathtouch, it can assign 1 damage to a blocker, which is automatically legal, and assign the rest to the defending player.

Honest curiosity, what if the one creature blocking in the second example is indestructible? Say a 5/5 trample/dt is blocked by a 4/4 indu? I think 4 goes through, but I'm questioning myself as usual.

4 would go through. Lethal damage has to be assigned, (So 1, whit deathtouch) but indestructible prevents lethal damage from killing the creature.
