So say I have {Mimic Vat}, {Sydri, Galvanic Genius} and {Mycosynth Lattice} on the field. If I were to animate Mycosynth and it were to die that turn, could I imprint it with Mimic Vat? Thanks

Yes you could, the same idea as if an animated land dies, when you put in the copy though it will enter as an exact printing of the card with no modifiers.
