You must pick one of the five colors, unfortunately you can not pick colorless

105.4. If a player is asked to choose a color, he or she must choose one of the five colors. "Multicolored" is not a color. Neither is "colorless."

In order to change it from one color you must choose a color.

And I am saying as per the card you care changing all instances of one color word for another.  Since colorless is not a color you can not change it.

Although you can target a colorless creature, if it doesn't have any color words on it to change though it will not do anything.

"4/15/2013   You can target any permanent with Trait Doctoring, including one with no color words or basic land types on it."
-gatherer of trait doctoring

Dangit. I had thought of a way for {Pentavus} to go infinite with Trait doctoring... Apparently that doesn't work

That won't change the word colorless on pentivus, which is the goal. I'm not aware of any spell or effect that will do this.
