If a creature I control is indestructible, can I effectively block any creature, and just tap the creature instead of going to the graveyard?

You don't even have to tap it

Lethal damage, destroy effects do not get rid of anything with indestructible

You don't even have to tap if you block and "lethal damage" is done

(That's regenerate)

Ways to get rid of an indestructible creature:
Sacrifice, 0/0 P/T or an exile

Just remember with thassa that you must have at least 5{U} devotion or she is not a creature, and therefore cannot attack or block (since you're using that card for example)
