I you {negate} or {cancel} a spell that an opponent cast targeting an heroic creature ability, would that creatures trigger still activate?

So that whole acher metaphor goes for pretty much anything on the stack?

More or less, yes.
Heroic is a trigger that happens when a spell is cast that targets a creature with the ability, so regardless of whether or not the actual spell resolves, heroic has already been triggered.
