Swing with both child becomes a 5/4 and ordeal falls off with 3 counters
Ace swung for five but the ordeal falls off as my child attacks will fencing ace hit for 5 or 4 double strike?

Fencing ace will hit for 4. The ordeal fell off during declare attackers step, before combat damage was dealt.
RESOLVED
Gatherer's rulings:
9/15/2013 The +1/+1 counter is put on the creature before blockers are declared and before combat damage is dealt.
9/15/2013 The check of whether the enchanted creature has three or more +1/+1 counters on it happens as part of the resolution of the attack triggered ability. If the third +1/+1 counter is put on the enchanted creature any other way, you won't sacrifice the Ordeal until the next time the creature attacks.

So the fencing ace only deals four damage because child was four toughness?

No no. Fencing ace only deals 4 because {ordeal of Erebos} fell off before damage was dealt. Thus {ethereal armor} lost an enchantment so fencing ace lost +1/+1
