You would have to give her haste as well or you are still waiting a turn

{Merieke Ri Berit} I think is much better. Cheaper cost, and buries creature if untapped. Only problem is that she's a 1/1, so you'll need to get  {Swiftfoot Boots} on her

Should note also that {Prophet of Kruphix} doesn't say 'may untap' and doesn't give you extra untap steps, it untaps all of your creatures on your opponent's untap steps.
This means that on each opponents turn, like it or not, you have to give back any creature you've taken when you're forced to untap {Rubinia Soulsinger}.
This doesn't make the combo useless though:
Play Rubinia on your opponents end step with a prophet already down, start of your turn steal a creature and swing with it. Pass the turn, before their attack phase, steal another creature, even if it has summoning sickness, and swing again on your turn.
The real power of this comes in multiplayer though, where they serve up adaptable creature denial.

Taking the creature. Wouldn't allow you to attack would it?
Summoning sickness?

With ruby already down, take their brand new, summoning sick beastie in their turn, choose not to untap Rubinia in your untap step, their creature loses summoning sickness in your upkeep, attack on your attack phase. Hey presto!

Sneaky :p

Isn't that what all the good combos are about? :)

Also remember you can do it before declaring blockers on their turn, so wait for them to declare the attack, the chump-block their bigger guys with the smaller ones they left behind and didn't want to lose, if available, you can always steal an existing creature of theirs at the start of your next turn too!

next level: add a sac outlet, then steal stuff and sac it

Indeed! {Plaguemaw Beast} is good as its a tap only ability, but
{Birthing Pod}, {Feed the Pack} or {Ooze Garden} have to be the best sac options as they all give you creatures back, though ooze gardens ability is only sorcery speed.
{Drowned Rusalka} and {Gobbling Ooze} have both got useful sac abilities for just one mana a pop, an lastly: {Greater Good} last in this list because the self-mill effect has few benefits and relies on you opponent having the right sized creatures.
