I realize that if I {Faith's Shield} my {Gideon Jura} in response to something like {Oblivion Ring}, the ETB effect will fizzle, but how does it work when the attack Gideon or redirect burn to him?

Correct. Bear in mind that the player is the target of a burn, not the planeswalker, and that if you give your planeswalker protection in response to the ability or spell, your opponent may still choose not to redirect the damage to it upon resolution.
