If I have a {Laboratory Maniac} in play and I cast {Brainstorm} with only one card in my library, my opponent cast {Angel's Grace}, what happens?

Nothing. You will not win and your opponent cannot lose this turn.

no. next turn he would not win. He has to place two cards from his hand (or as many as he can) on top of his library to resolve {brainstorm}. So if he places two cards back on top of his library, it would be at least 3 normal draw steps until he could win via {laboratory maniac}

Actually, no, because of Brainstorm. Brainstorm will still resolve, entirely, including the final clause that ends in putting two cards from your hand in top of your library. Since your library is empty after the drawing, you end up with a library of two cards after Brainstorm is done. This means the player will have to draw 3 more cards in order to lose/win by drawing from an empty library.
