{Underworld cerebus} says it's third ability triggers when it dies, could one respond by taking it out of the graveyard, thereby not losing it, or would the game rules say "please I exile what I want!" ?

Sorry, it doesn't give you an option. The card gets exiled on dying so it won't touch the graveyard to get returned. Cards are very specific on "may" and "just do it". This a "just do it" situation.
Well that's the question. In order to "die", he has to touch the graveyard, as the old wording was "put into a graveyard from the battlefield". It doesn't say "exile instead" it's triggered upon actual death. Also I'm not implying it as a May effect what I mean is could I say give regrowth flash and put him into my hand in response to the trigger?

Maybe Kaleo or Gorzo can back me up on this, but I believe the exile part falls under a replacement effect.... I could be wrong though.
It can be removed from the yard by other effects. When it dies is the trigger the exile and remainder of his effect happen upon resolution. Plays such as {scavenging ooze} to gain a life, {naya charm} to return it to your hand and so on will make use of the dog before it gets exiled. Also it's rulings specifically state that not being able to exile it to it's own ability will not interfere with the returning all creatures part.
9/15/2013 If you can't exile Underworld Cerberus when its last ability resolves, perhaps because it's been exiled by another spell or ability, each player will still return all creature cards from his or her graveyard to his or her hand.
P.s. replacement effects always use a word like instead to indentify that it is not a trigger.
If it's a simple replacement effect, it would say instead wouldn't it?

I knew it wasn't a replacement.... I just didn't know a better way to explain it. From the way the card reads Without any other effect on it, it goes to exile and can't be pulled off the graveyard with it's own ability. Maybe I should stay off the thread... Lol.
Yeh, It's also worth noting there is thus a window of opportunity to target the other creatures that are in the graveyard while his "return all creatures to hand..." ability is still on the stack, because his second ability is no longer preventing it. I didn't really realize it until someone scoozed me in response one time.
