When sacrificing (ordeal of heliod) do you also remove its three or more counters?

No

No you would not. The counters are on the creature not the enchantment. The only way they would fall off is if the creature left the battlefield. Like exiling it killing it returning it to your hand or library would make the counters fall off as well.

Just as long as they don't kill off your creatures as you're attacking to get those counters :P

I love {ordeal of Erebos} attacking people's hands can be pretty annoying and helpful at times I think :D especially when they're big hands.

Does centuar battlemaster trigger each time an ordeal triggers?

No. He triggers once when you target him, but he gets 3 counters for heroic, meaning you can sac the ordeal right away instead of waiting to otherwise generate three 1/1 counters

So whenever a creature with an ordeal enchanted on it gets counters, it counts towards the enchantment? What if i had a giant growth or a +x/+x until end of turn. Do those instant counters apply to the enchantment as well?

Those +x/+x until the end of turn instants aren't counters so they don't count towards the ordeal

In the aspects of wither do the negative counters apply as the creature attacks or at the end of combat?

I was under the impression that you couldn't sacrifice the ordeal unless you were attacking as sacrificing is part of the delayed trigger...

"Whenever this creature attacks...then, if it has 3 +1/+1 counters on it, sacrifice it and blah, blah, blah.

You can't just sac it once there is three counters.

You are correct Scotch. I was unclear in my post. Thanks for clarifying.

they're counters and just like how +1/+1 counters are constantly giving a creature that boost, -1/-1 counters are constantly giving that creature that debuff
