Ny brother got out all three of kaldra cards and the token she has "whenever equipped creature deals damage to a creature, remove that creature from the game" and I block with "stuffy doll" would stuffy doll be exiled?

Stuffy doll, though indestructible, still takes damage so yes it would

Now if it said"Prevent damage dealt to", then that would be a different story

If I had 'pariah's shield' on 'stuffy doll' will it still?

And yes cause the damage will be dealt to Stuffy Doll still

It would still exile {Stuffy Doll}, because the source is still the same. {Pariah's Shield} redirects the damage, but it doesn't change where the damage is comin from.
