Verdict and PC destroys creatures so to save them you can:
1. Make them Indestructible ({Boros Charm} {Rootborn Defenses} {Ready // Willing} etc.)
2. Regenerate them ({Mending Touch} { Golgari Charm} {Trollhide} etc)
3. Remove them from the game in response to Verdict or PC ({Legion's Initiative} or effects like {Ætherling})

All help/save your creatures!

(Those were all standard format answers there are tons more in other formats)

Question off topic. Are you able to put enchantment on creature in response to opponent not blocking?

No. UNLESS the enchantment has flash like {Feral Invocation} or {Boon Satyr}. Otherwise you can only cast enchantments during either of your Mainphases.
